How do I access the app?

Open the Gelato Miracoli portal, sign in, and enter the app from the mobile/web portal experience. The same app is available from the hosted web portal and from the iOS build, so testers should be working from one unified interface.

What are the main sections?

Home is the starting dashboard with quick access to the Recipe Vault, equipment setup, and current production workspace. Recipe Lab is where recipes are created and balanced. Recipe Vault / Library stores finalized recipes with metrics, ingredient rows, costs, and nutrition label snapshots. Pantry stores ingredient data with full technical values. Cases is for display case planning. Equipment stores production units and display cases. Profile holds account and business settings.

What does the Cases section do?

Cases helps plan which saved recipes belong in a display case. The intended workflow is to assign recipes to case slots and use their recipe temperatures and PAC values to choose a practical display case temperature.

How do I create a recipe?

1) Open Recipe Lab. 2) Choose a structure archetype such as Classic Crema, Rich Chocolate/Nut, Fruit Sorbetto, From Scratch, or Custom. 3) Choose the primary flavor. 4) Adjust batch size with the kg controls. 5) Optionally select a target display case. 6) Review PAC, POD, and solids. 7) Add ingredients or flavor accents as needed. 8) Save the recipe to the vault when ready.

What do PAC, POD, and solids mean?

PAC is the freezing power value used to estimate softness and serving temperature. POD is sweetness power. Solids are the total non-water portion of the recipe. The Lab shows whether each value is inside the target range for the chosen archetype or selected display case.

What is recommended temperature?

Accepted Answer

Recipe Temp is the estimated ideal serving temperature based on the recipe balance. Case Setpoint is the display case temperature selected in Equipment. If no case is selected, the app shows the recipe estimate only.

What happens when I select a display case?

Accepted Answer

When you select a case, the Lab compares the recipe against the case's target temperature and PAC range. The app can rebalance toward that case target where possible, and it warns when the case/recipe combination is outside the intended range.

How do I make a master white base?

In Recipe Lab, select a base-style archetype such as Classic Crema or From Scratch, then choose Master White Base as the primary flavor/base target. This is intended for neutral bases that will later receive inclusions such as cookies, variegatos, stracciatella, or other mix-ins.

How do multi-flavor recipes work?

Primary flavor is the main driver of the recipe. Secondary and accent flavors are added at smaller dosing roles so they support the main profile instead of taking over the balance. In the ingredient table, rows show role labels such as primary flavor, accent flavor, sweetener, freezing control, liquid/dairy, fat/dairy, and structure/stabilizer.

How do I add or remove ingredients in the Lab?

Use Add Ingredient to add a primary, secondary, accent, sweetener, dairy/liquid, fat, or stabilizer role. Removable rows show a remove control. Locked structural rows may be protected when they are required by the archetype.

How do I save a recipe?

Accepted Answer

Press Save in Recipe Lab, review the production details, then choose Save to Vault. After saving, the recipe closes the save sheet and appears in the Library under the signed-in account.

Can I print or export a recipe?

Accepted Answer

Yes. Use Print for a printable recipe view and Export for sharing/export workflows. Nutrition labels are generated separately with the Label button.

How do nutrition labels work?

Accepted Answer

Press Label in the Lab to generate a nutrition label view for the current recipe. Saved recipes retain their nutrition label snapshot so the label can be re-opened or printed from the Library later. Serving size is currently built around a gelato serving weight workflow.

What if a recipe looks out of range?

Accepted Answer

Check the selected archetype, display case, ingredient roles, and whether any flavor paste has a high dosage or high solids value. The app may recommend rebalancing or warn that the chosen display case does not match the current recipe.

How do I add a pantry ingredient manually?

1) Open Pantry. 2) Press Add Ingredient. 3) Enter name, brand, product code, and category. 4) Select product form, process type, and balance eligibility. 5) Fill in fat, protein, sugar, Brix, solids, water, PAC, POD, dosage, and cost fields. 6) Press Save.

Can I scan a nutrition label or spec sheet?

Yes. In Add Ingredient, use PDF / Image upload or Camera. The app scans the file, fills the ingredient form, and asks you to review the extracted values before saving.

What files can be scanned?

Accepted Answer

The scanner supports PDFs and common image formats such as JPG, PNG, WebP, BMP, and TIFF. PDF spec sheets generally produce better results than photos. Camera scans should be clear, flat, and well lit.

What if an ingredient scan looks wrong?

Treat scanned values as a draft. Review the source label/spec sheet and manually correct any field before saving. Camera OCR is helpful, but PDF technical sheets are usually more reliable.

What is balance eligibility?

Balance eligibility tells the Lab whether an ingredient should be used as a real balancing ingredient. Instant bases, glazes, toppings, decorative products, and similar products should usually be disabled so the AI assistant and recipe engine do not use them as core formula ingredients.

What is in the default pantry for new users?

New users receive the curated pantry foundation. It includes core sugars, dairy, stabilizers, fresh fruits, frozen/IQF fruit profiles, common flavor pastes, curated manufacturer items, and from-scratch stabilizers such as locust bean gum, guar gum, xanthan gum, carrageenan, and pectin. The app also hides or excludes instant/decorative products such as SS, 5 Star, AR, glazes, toppings, Evolution, Coriandolina, and similar non-balancing products.

Can users add their own private pantry items?

Yes. Custom ingredients are saved under the signed-in user. Editing a default/master pantry item creates or updates the user's own copy rather than overwriting the shared master pantry.

How do equipment settings work?

Open Equip to set production units and display cases. Batch freezers can store brand, model, min batch, max batch, and expected overrun. Display cases store target temperature, capacity, and PAC sorting ranges.

What is overrun?

Overrun is the air incorporated during freezing. It affects predicted liters, pan yield, and cost per liter. If a machine has no known fixed overrun, use a realistic gelato estimate and adjust it after production tests.

Miracoli Assistant can help draft recipes, navigate the Lab, populate recipe requests such as "dark chocolate orange 3kg," and help add missing pantry ingredients in review-first mode. It should still be treated as an assistant: review the recipe math and ingredient choices before saving or producing.

Testers should verify sign-up/sign-in, default pantry visibility, adding a custom ingredient, scanning an ingredient, creating a recipe, selecting a display case, saving to the Library, reopening the Library, printing/exporting, nutrition label generation, equipment save, and basic mobile scrolling on Lab and Pantry.

Do I own my recipe data?

Yes. Your intellectual property is vaulted and encrypted. We provide the chemistry engine; you own the formulas. Export, port, or delete at any time — no lock-in clauses, no data licensing in the fine print.

Can I use this without smart hardware?

Yes. The hardware telemetry is optional. You can manually enter your case temps for accurate formulation. The chemistry engine doesn't care whether the temperature comes from a sensor or a thermometer reading — it cares that the number is correct.
